Peanut Brittle

My dad’s favorite Christmas treat is Peanut Brittle.  I made it last for the first time last year for Christmas and loved it – not just eating it, but making it, too! 

The recipe I use I found at Allrecipes.com. (Pictures are mine)

Ingredients

  • 1 cup white sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1 cup peanuts
  • 2 tablespoons butter, softened
  • 1 teaspoon baking soda
  • Directions

    Grease a large cookie sheet. Set aside.

    In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. December 016

    Stir until sugar is dissolved.  The mixture will be almost clear when it is ready for the peanuts.

    Stir in peanuts.

    Set candy thermometer in place, and continue cooking. December 030

    Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.  

    Remove from heat; immediately stir in butter or margarine and baking soda (BEST PART :) ); pour at once onto cookie sheet.

    With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

    I don’t know how many batches I will make this year.  It takes about an hour to make, so I either have to do it during nap time, or after bed time, but it is totally worth it.

    1. Kati-that looks like absolute perfect peanut brittle. You know that's Keith's favorite. He'll have to taste at least a few times to make sure it is as good as it looks. ;-)

    2. Y U M M Y!!! I LOVE peanut brittle! I'm very impressed that you made it; I have not the patience!

      What a bummer that Dr. M wants me to watch my carbs now, the result of a high (but not too high) glucose test. :P And right before the holidays, no less. ;)
